I LOVE carnitas and we often have quite a few pork shoulder roasts. Making carnitas is a great way to use up a roast in a non-traditional way. Many flavors come together to create a tasty filling for flour or corn tortillas, tortilla chips, or a healthier taco salad. Be sure to broil the meat just before serving for a few nice crispy bites mixed into the moist pork. Best part, it’s crock pot so fix it and forget it until just before dinner.
